Signora Pizza is a one of a kind mobile pizzeria that was designed and built in Italy
before being shipped to the United States. Our pizzeria is housed in a twenty-foot container that has been modified into a full functioning kitchen.

Signora Pizza has its roots in Naples, perched between Mount Vesuvius and the Mediterranean Sea. Our food truck features a wood fired oven that can be admired by all of our customers through a glass wall. We offer the oldest and most popular Neapolitan Street Food including Traditional Pizza, Wallet Pizza, Fried Pizza and other typical dishes.

Wallet Pizza has an ancient history. It emerged around 1738 and was sold on streets by errand boys. They carried copper stoves on their shoulders, spreading the pleasant scent of the steaming pizzas in the alleys of Naples, which attracted people from all over the city.

It is called Pizza a Portafoglio (literally “WALLET” pizza) because it is folded four ways, making it compact and easy to eat with your hands. It is served freshly baked in paper wrapping.

Fried Pizza was born as response from the Neapolitan people after the war. Indeed, pizza in the first post-war period was almost luxurious, due to the scarcity of ingredients and the destruction of wooden ovens during the war.

Fried Pizza has two shapes; round or folded as a half moon like “calzone”. They are both stuffed with traditional ingredients and then deep fried.

Fried Pizza was historically made by women. In the famous movie, “The Gold of Naples”, directed by Vittorio De Sica, you can see the wonderful Sophia Loren plays the role of a pizzaiola frying and selling fried pizza on the street. This is a beautiful representation of Fried Pizza’s historic culture.

Signora Pizza is proud to restore and return to these traditions. Pizza, for “Signora Pizza”, is how we are defined. We know you’ll love our pizza, whether you’re enjoying it while sitting for a nice lunch or eating it on the go.

Our pizza is made with sourdough and a combination of organic flours.
Our dough is highly hydrated and naturally fermented for over 36 hours. This makes it light, flavorful, and easy to digest.
We bake our pizza in an authentic wood fired oven which gives it the perfect texture and fragrance.

We use:

• DOP San Marzano Tomatoes
• Agerola Fior di Latte
• Agerola Smoked Provola
• Buffalo Ricotta Cheese
• DOP Parmesan Cheese
• Nduja Spilinga (Spicy Spreadable Salame)
• Extra Virgin Olive Oil EVOO
• Peanut Oil*

*We use this oil exclusively for frying
